White asparagus, free-range egg, hazelnuts Grana Padano crisp and kalamansi gely
Slowly cooked “red label” salmon, herbs sauce, trout eggs and crisp radishes
Peas and mint velouté Buratta cheese and porc breast dried with pepper.

Meat dishes

Black Angus beef flank steak cooked on the BBQ. Pan-fried potatoes cebette and mustard.
Roasted free-range yellow chicken supreme with black garlic. Cauliflower with orange and coriander.
Shreded shoulder of lamb with confit lemon soft and crunchy celeriac.
Roast “red label” pork chop Fregola sarda, spianata piccante and spinach shoots
